This menu is an ode to Umbria’s most opulent and earthy traditions, finding its highest expression in the art of norcineria (the ancient craft of pork butchery and curing) and in farmyard game.

The banquet begins with the renowned art of Norcia’s charcuterie.

featuring the standout Crostino with Liver Pâté, which introduces the key flavor of the menu.
Torta al testo
the rustic, unleavened flatbread cooked on a stone griddle, serving as the perfect vehicle for the bold flavors of the charcuterie and olive oil.
First Course
Pappardelle with wild boar
The first course celebrates the ultimate marriage between pasta and wild boar: fresh egg pasta generously dressed with a traditional Umbrian wild boar ragù. The meat is marinated and slowly cooked with red wine, aromatic herbs, and tomato. A robust and enveloping dish that tells the story of the land and peasant cooking with every bite.
Lasagna with the four umbrian treasures
Layers of fresh egg pasta alternate with a rich and fragrant filling: truffle, porcini mushrooms, Umbrian extra virgin olive oil, and Norcia sausage. An encounter of intense, authentic flavors that celebrates Umbria in every mouthful.
Second Course
Roast stuffed guinea fowl
This bird, often prepared stewed or “alla ghiotta,” is presented here in its roasted version, which gives a crispy exterior balanced by succulent meat inside. The true complexity of the dish lies in the filling: a flavorful blend of minced veal and pork, Grana cheese, eggs, breadcrumbs, and an aromatic bouquet of sage and rosemary.
Slow-Braised veal in umbrian red wine with "torta al testo"
Veal slowly braised in Umbrian red wine with herbs and vegetables until tender and full of flavor. Served with warm Torta al Testo, the rustic flatbread that’s perfect for soaking up the sauce and completing the dish with an authentic country touch.

The “Sassi di Colfiorito”
New potatoes with rosemary and sage, absorbing the rich cooking juices of the guinea fowl.
Umbrian garden salad
Lettuce, tomatoes, cucumbers, carrots, and red onion. Dressed with Umbrian extra virgin olive oil and a pinch of salt. Light, wholesome, and full of color.
Sweet Finale: ritual and traditional desserts
The final chapter of the menu celebrates traditional Umbrian pastry, tied to seasonality and, in some cases, directly connected to the figure of Saint Francis.
I Mostaccioli
These are the sweets with the strongest ritual link to the Feast. Tradition holds that Saint Francis longed for them shortly before his death. Simple in preparation—made with flour, sugar, raisins, lemon zest, and yeast—they are enriched with grape must, a product typical of the harvest season.
Rocciata of Assisi
The Rocciata of Assisi is the quintessential autumn/winter dessert, particularly widespread in the Foligno and Spoleto areas. Though it resembles strudel in its rolled shape, the filling is distinctly Umbrian, made of apples, walnuts, raisins, honey, spices, and sometimes cocoa.
Tozzetti and Vin Santo
Crunchy golden almond biscotti served with a glass of Umbrian Vin Santo. A sweet and traditional ending, meant to be dipped slowly and savored at leisure.
